Recipe: Mediterranean Millet Risotto

How to cook with Millet:

Ingredients:

  • Olive oil
  • 2 garlic cloves
  • 1 chopped red onion
  • 1 roma tomato
  • 1/2 aubergine
  • 1 zucchini
  • 1 vegetable stock cube (2 cups boiling water)
  • Some almond milk for creaminess
  • Squeeze half a lemon
  • 1 cup millet
  • Salt, pepper, paprika and rosemary

Method:

Sauté the veggies, add roasted millet with stock and almond milk to cook. Add salt, pepper, paprika and rosemary. Heat in the pan until millet is cooked and ready to serve.
