Spicy Pumpkin and Carrot Soup Recipe
Serves 5-6 people

Here’s what you’ll need:
- 2 red onions
- 3 garlic cloves
- 1kg chopped pumpkin
- 600g carrots
- 1tsp turmeric
- 1tsp curry powder
- ½ tsp ginger
- ½ tsp cinnamon
- 400ml vegetable broth
- 1/3 cup coconut milk
- Chili flakes
- Salt and pepper
- Pumpkin seeds
Method:
Fry your onions and garlic in coconut oil. Add the turmeric and curry powder and continue to stir. Once the onions and garlic are cooked, add the chopped pumpkin and carrots. Mix all together.
Add the vegetable broth, salt, pepper, and chili flakes and leave it cook for about 15 minutes. Before you’re about to blend the mixture, add the remaining powders: ginger and cinnamon as well as the coconut milk.
Blend and serve with pumpkin seeds.
